Sparkling wine made from the wine we call I Am Not What I Look Like. As with our other wines, we use the traditional Champagne method, but we do not disgorge the wine from the lees. Some bottles fermented more fully and therefore have more bubbles, while others fermented less and therefore retain more residual sugar.
