Flor — also known as "křís" — is a film that forms on wine when it matures in a barrel that is not completely full. It gives the wine a distinctive flavour and may come across as slightly vinegary. We then used this wine to make sparkling wine by the traditional Champagne method, leaving the lees in the bottle instead of disgorging them. You do not have to drink the lees, but they are harmless.
